Method

Preparation of Octopus

    Clean the Octopus

    Rinse the octopus under cold water to remove any debris. Remove the beak and innards if not already done by your fishmonger.

    Steam the Octopus

    Fill a large pot with water and bring it to a boil. Place a steaming basket over the pot and add the octopus. Cover and steam for about 30-40 minutes or until tender.

    Cool and Slice

    Once cooked, remove the octopus and let it cool slightly. Slice it into bite-sized pieces.

Preparation of Vegetables and Potatoes

    Boil the Baby Potatoes

    In a separate pot, bring salted water to a boil. Add the baby potatoes and cook for about 15-20 minutes until tender. Drain and set aside.

    Prepare the Vegetables

    While the potatoes are boiling, chop the lettuce, slice the cherry tomatoes in half, dice the cucumber, and thinly slice the red onion.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Adjust to taste if necessary.

    Add Fresh Parsley

    Finely chop the fresh parsley and mix it into the dressing.

Assembling the Salad

    Combine All Ingredients

    In a large bowl, add the sliced octopus, boiled baby potatoes, chopped lettuce, cherry tomatoes, cucumber, and red onion.

    Dress the Salad

    Pour the dressing over the salad and gently toss to combine all the ingredients.

    Serve

    Serve the salad immediately, garnished with additional chopped parsley if desired.
