Pasta Dough

Method

Pasta Dough Preparation

  1. 1

    Mix Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil.

  2. 2

    Knead the Dough

Using a fork, beat the eggs gently, then gradually incorporate the flour until a dough begins to form. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  3. 3

    Rest the Dough

Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.

Chicken Cacciatora Filling Preparation

  1. 4

    Cook the Chicken

In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes. Remove from skillet and let cool.

  2. 5

    Sauté Vegetables

In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté for about 5-6 minutes until softened.

  3. 6

    Combine Filling Ingredients

Add the crushed canned tomatoes, oregano, basil, salt, and pepper to the skillet. Stir well and let simmer for 10 minutes. Shred the cooked chicken and add it back to the skillet along with the grated Parmesan cheese. Mix well and remove from heat.

Assembly and Cooking

  1. 7

    Roll Out Pasta

After the dough has rested, divide it into four pieces. Roll each piece out thinly using a pasta machine or a rolling pin, dusting with flour as needed.

  2. 8

    Fill Pasta

Cut the rolled pasta into squares. Place a tablespoon of the chicken cacciatora filling in the center of each square. Fold the pasta over to create a triangle or rectangle shape and seal the edges, ensuring there are no air pockets.

  3. 9

    Cook the Filled Pasta

Bring a large pot of salted water to a boil. Cook the filled pasta for about 3-4 minutes or until they float to the top. Remove with a slotted spoon.

  4. 10

    Prepare the Sauce

In a saucepan, combine the crushed canned tomatoes, minced garlic, oregano, basil, salt, and pepper. Simmer for 15-20 minutes on low heat.

  5. 11

    Serve

Serve the cooked pasta filled with chicken cacciatora on plates, topped with the sauce and additional grated Parmesan cheese.
