Fish Preparation
- 1
Prepare the Fish
Rinse the red snapper fillets under cold water and pat dry with paper towels. In a bowl, combine the lemon juice, salt, and black pepper. Rub this mixture all over the fillets, ensuring they are well coated. Set aside to marinate for 15 minutes.
Seafood Filling
- 2
Cook the Seafood Filling
In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until they are soft and translucent, about 5 minutes. Stir in the shrimp, scallops, and crab meat, cooking for another 5-7 minutes until the seafood is fully cooked. Remove from the heat and mix in the chopped parsley, breadcrumbs, and Old Bay seasoning. Allow the mixture to cool slightly before using it to stuff the fish.
Assembly and Cooking
- 3
Stuff the Fish
Preheat your oven to 375°F (190°C). Take the marinated fillets and carefully place an equal amount of the seafood filling onto one side of each fillet. Fold over the other side to cover the filling, securing it with toothpicks if necessary.
- 4
Bake the Fish
Arrange the stuffed fillets in a baking dish. In a small bowl, mix the melted butter, lemon juice, and paprika. Drizzle this mixture over the stuffed fish. Bake in the preheated oven for 25-30 minutes or until the fish is cooked through and flakes easily with a fork.
