Panna Cotta Base Preparation

Bloom the Gelatin
In a small bowl, combine the gelatin powder with cold water. Let it sit for about 5-10 minutes until the gelatin absorbs the water and becomes gelatinous.

Heat the Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin, mixing until the gelatin is completely dissolved.

Pour into Molds
Pour the panna cotta mixture into individual serving cups or molds. Allow them to cool to room temperature.

Chill
Cover the cups with plastic wrap and refrigerate for at least 4 hours or until set.
Berry Sauce Preparation

Prepare the Sauce
In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries begin to break down and release their juices.

Cool the Sauce
Remove from heat and let the berry sauce cool completely before serving.

Once the panna cotta is set, carefully remove it from the molds (if using) and place it on a serving plate. Top with the berry sauce and enjoy your creamy Italian dessert!
