Morcilla (Blood Sausage)

Method

Preparing Morcilla

  1. 1

    Cook the Morcilla

In a large skillet, heat the olive oil over medium heat. Add the morcilla pieces and cook for about 5-7 minutes, turning occasionally until they are browned and heated through. Remove from the skillet and set aside.

  2. 2

    Sauté the Vegetables

In the same skillet, add the chopped garlic, onion, and red bell pepper. Sauté for about 5 minutes until the vegetables are softened. Sprinkle in the paprika, salt, and black pepper, stirring to combine.

  3. 3

    Combine Morcilla and Vegetables

Return the cooked morcilla to the skillet with the sautéed vegetables. Stir gently to combine and heat for an additional 2-3 minutes. Remove from heat and set aside.

Making Arepas

  1. 4

    Prepare the Arepa Dough

In a large bowl, combine the pre-cooked corn flour and salt. Gradually add warm water while mixing with your hands until a soft, pliable dough forms. Let the dough rest for about 5 minutes.

  2. 5

    Shape the Arepas

Divide the dough into 6 equal portions and shape each portion into a disk about 1/2 inch thick.

  3. 6

    Cook the Arepas

Heat a skillet or griddle over medium heat and melt 1 tablespoon of butter. Cook the arepas for about 5-7 minutes on each side until they are golden brown and cooked through. Repeat with remaining arepas and butter.

Assembly

  1. 7

    Serve

Slice the arepas open and fill them with the morcilla mixture. Serve hot and enjoy!
