    Prepare the Beef

    Rinse the beef short ribs under cold water and pat them dry with a paper towel. Cut them into smaller pieces if necessary.

    Prepare the Vegetables

    Peel and chunk the yuca, peel and slice the plantains, peel and dice the potatoes, and cut the corn into thirds. Dice the onion and green bell pepper, and mince the garlic.

    Chop the Cilantro

    Wash the cilantro thoroughly and chop it finely.

Cooking the Sancocho

    Start the Broth

    In a large pot, add the beef short ribs and water. Bring to a boil over high heat, then reduce the heat to medium-low and let it simmer for about 1 hour.

    Add Aromatics

    After 1 hour, add the diced onion, minced garlic, diced green bell pepper, salt, black pepper, cumin, and oregano to the pot. Stir well and continue to simmer for another 30 minutes.

    Add Root Vegetables

    Add the yuca, potatoes, and corn to the pot. Stir gently and let it cook for an additional 20 minutes.

    Add Plantains

    Finally, add the sliced plantains to the pot and simmer for another 15 minutes, or until all the vegetables are tender and the beef is cooked through.

Serving the Sancocho

    Ladle the sancocho into bowls and garnish with chopped cilantro. Serve hot with lime wedges and slices of avocado on the side.
