Prepare the Plantains
Peel the ripe plantains by cutting off both ends and making a slit along the skin. Gently remove the skin and slice the plantains diagonally into 1-inch thick pieces.

Heat the Oil
In a large frying pan, pour in the vegetable oil and heat it over medium heat until it reaches around 350°F (175°C). You can test the oil by dropping a small piece of plantain into it; if it sizzles, the oil is ready.

Fry the Plantains
Carefully place the sliced plantains into the hot oil in a single layer. Fry them for about 3-4 minutes on each side, or until they are golden brown and caramelized.

Drain and Season
Once the plantains are cooked, remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

Serve the maduros warm as a side dish or snack. Enjoy them plain, or with your favorite dipping sauce.
