Preparation of the Beef Tongue

    Clean the Beef Tongue

    Rinse the beef tongue under cold water to remove any impurities.

    Cook the Beef Tongue

    In a large pot, place the beef tongue and cover it with 2 liters of water. Add 1 bay leaf, 1 teaspoon of cumin powder, and salt to taste. Bring to a boil, then reduce the heat and simmer for about 2-3 hours until the tongue is tender.

    Peel the Beef Tongue

    Once cooked, remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and set aside.

Cooking the Sauce

    Sauté the Aromatics

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and minced garlic cloves, and sauté until they are translucent.

    Chop the carrots, potatoes, bell pepper, and tomatoes. Add them to the skillet and cook for about 5-7 minutes until they start to soften.
