Method

Meatballs Preparation

  1. 1

    Mix the Meatball Ingredients

In a large mixing bowl, combine the ground beef, rice, egg, minced garlic, chopped cilantro, salt, and black pepper. Mix well until all ingredients are fully incorporated.

  2. 2

    Form the Meatballs

With your hands, form the mixture into small meatballs, about 1 inch in diameter. Set aside on a plate.

Soup Base Preparation

  1. 3

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced carrot, diced celery, and chopped onion. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 4

    Add Garlic and Tomatoes

Stir in the minced garlic and cook for an additional minute. Then add the canned diced tomatoes and cook for another 2-3 minutes.

  3. 5

    Add Broth and Seasonings

Pour in the chicken broth and add the bay leaves, salt, and black pepper. Bring the mixture to a boil.

  4. 6

    Add Meatballs

Once boiling, carefully add the meatballs to the pot. Reduce the heat to a simmer and cook for about 20-25 minutes, or until the meatballs are cooked through.

  5. 7

    Finish the Soup

Add the lime juice and stir well. Adjust seasoning with more salt and pepper if needed.

Garnishing and Serving

  1. 8

    Garnish the Soup

Ladle the soup into bowls and garnish with chopped cilantro and lime wedges.

  2. 9

    Serve Hot

Serve the sopa de albondigas hot and enjoy!
