    In a bowl, combine lemon juice, salt, black pepper, and garlic powder. Add the fish fillets and coat them well. Cover and refrigerate for at least 30 minutes.

    In a large mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt. Gradually add cold sparkling water while whisking until you reach a smooth, thick batter consistency. Set aside.

    Peel the russet potatoes and cut them into thick fries. Rinse in cold water to remove excess starch, then pat dry with paper towels. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
