Remove the stems from the Portobello mushrooms and gently scrape the gills out with a spoon. Brush the caps with 1 tablespoon of olive oil and set aside.

In a large bowl, combine the cooked sausage mixture with breadcrumbs, grated Parmesan cheese, chopped parsley, salt, black pepper, red pepper flakes, and the beaten egg. Mix until well combined.

Spoon the sausage filling into each mushroom cap, pressing down gently to pack the filling.
