Making the Pasta Dough

Combine Ingredients
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Mix Filling
In a bowl, combine the sautéed mushrooms and garlic with ricotta cheese, grated Parmesan cheese, chopped basil, and salt and pepper to taste. Mix well until fully combined.

Roll Out Dough
After resting, divide the dough into 4 pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, about 1/16 inch thick.

Fill Pasta
Place a teaspoon of the filling about 1 inch apart along one sheet of pasta. Moisten the edges of the pasta with water and fold over to create pockets. Press down to seal.

Cook Filled Pasta
Bring a pot of salted water to a boil. Carefully add the filled pasta and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon.
Making the Sauce

Prepare Sauce
In a clean skillet, melt butter and olive oil over medium heat. Add heavy cream and bring to a simmer, stirring occasionally, until slightly thickened.

Combine and Serve
Add fresh parsley and toasted pine nuts to the sauce. Gently toss the cooked filled pasta in the sauce until well coated. Serve immediately.
