Prepare the Halibut

    Marinate the Halibut

    In a small bowl, mix together the olive oil, lemon juice, garlic powder, salt, and black pepper. Place the halibut fillets in a shallow dish and pour the marinade over them. Make sure the fillets are well coated. Let them marinate for at least 30 minutes in the refrigerator.

    Cook the Halibut

    Preheat a grill or skillet over medium-high heat. Remove the halibut from the marinade and place it on the grill or skillet. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from heat and set aside.

    While the halibut is cooking, slice the ciabatta rolls in half horizontally. Toast them lightly on the grill or in a toaster for added crunch.

    Spread mayonnaise on the bottom half of each toasted ciabatta roll. Add a layer of Dijon mustard on top of the mayonnaise.
