Method

Preparing the Haddock

    Prepare the batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.

    Heat the oil

    In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Coat the haddock

    Dip each haddock fillet into the prepared batter, allowing any excess to drip off.

    Fry the haddock

    Carefully place the battered haddock fillets into the hot oil, frying them for about 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Preparing the Chips

    Cut the potatoes

    Peel the potatoes and cut them into thick strips (about 1/2 inch wide).

    Soak the potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    In another pot or deep fryer, heat the oil over medium heat until it reaches 325°F (160°C).

    Drain the potatoes and pat them dry with paper towels. Fry the potato strips in batches for about 4-5 minutes until they are soft but not browned. Remove them from the oil and drain on paper towels.

    Increase the oil temperature to 375°F (190°C) and fry the pre-cooked chips again in batches for about 2-3 minutes or until golden brown and crispy. Drain on paper towels and season with salt to taste.
