Heat Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.

Cook the Mixture
Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon (about 5-7 minutes).

Add Vanilla Extract
Remove the saucepan from heat and stir in the vanilla extract. Let the base cool to room temperature.

Add the chosen flavor ingredient (e.g., cocoa powder, pureed strawberries, chopped pistachios, or coffee grounds) to the cooled gelato base and mix well until fully incorporated.

Cover the mixture and refrigerate for at least 2-4 hours, or overnight for best results.

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 20-25 minutes).
