Preparing the Beef

Sear the Beef
In a large skillet, heat a tablespoon of oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 5-7 minutes per side.

Cook the Beef
Transfer the seared beef to a slow cooker. Add the sliced onion, minced garlic, beef broth, soy sauce, thyme, and additional salt to taste. Cover and cook on low for 8 hours or until the beef is tender and easily shreds.
Making the Au Jus

Prepare the Au Jus
Once the beef is finished cooking, remove it from the slow cooker and set it aside to rest. Strain the cooking liquid into a saucepan, discarding solids. Add Worcestershire sauce and black pepper to the strained broth. Heat over medium heat until warmed through.
Assembling the Sandwich

Prepare the Baguette
Preheat your oven to 375°F (190°C). Slice the French baguettes in half lengthwise and spread butter on the insides.

Add Cheese and Beef
Place the buttered baguettes on a baking sheet. Layer the provolone cheese on the bottom half of each baguette. Shred the cooked beef and distribute it evenly on top of the cheese. Add more cheese if desired.

Bake the Sandwiches
Place the top half of the baguette back on and bake in the preheated oven for 10-12 minutes or until the cheese is melted and the bread is crispy.

Slice the sandwiches in half and serve warm with a bowl of au jus for dipping.
