Caramel Preparation

    Make the Caramel

    In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring gently until the sugar dissolves.

    Caramel Color

    Once the sugar has dissolved, stop stirring and let it boil until it turns a deep amber color. This should take about 8-10 minutes. Keep a close eye on it to prevent burning.

    Cool the Caramel

    Immediately pour the caramel into a 9-inch round baking dish, tilting the dish to evenly coat the bottom. Set aside to cool and harden.

Custard Preparation

    Prepare the Custard Mixture

    In a large mixing bowl, whisk together the eggs until well beaten.

    Add Remaining Ingredients

    Add the sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt to the eggs. Whisk until fully combined and smooth.

    Pour Custard into Dish

    Carefully pour the custard mixture over the cooled caramel in the baking dish.

Baking

    Prepare Water Bath

    Preheat your oven to 350°F (175°C). Place the baking dish in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the flan dish.

    Bake the Flan

    Bake in the preheated oven for 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

    Cool and Refrigerate

    Remove the flan from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Serving

    Unmold the Flan

    To serve, run a knife around the edges of the flan to loosen it. Place a serving plate on top of the dish and carefully flip it over to release the flan onto the plate. The caramel will flow over the top.
