Method

Preparation of Marinade

  1. 1

    Make the Marinade

In a medium bowl, combine olive oil, minced garlic, chopped parsley, chopped oregano, red wine vinegar, salt, and black pepper. Mix well until fully combined.

Marinating the Skirt Steak

  1. 2

    Marinate the Meat

Place the skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring that it is fully coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for better flavor.

Cooking the Entrana

  1. 3

    Grill the Steak

Preheat your grill to medium-high heat. Remove the skirt steak from the marinade and discard the marinade. Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness.

  2. 4

    Rest the Meat

Once cooked, remove the steak from the grill and let it rest for about 5 minutes before slicing. This allows the juices to redistribute.

Serving the Dish

  1. 5

    Slice and Serve

Slice the skirt steak against the grain into thin strips. Serve with lemon wedges and chimichurri sauce on the side, if desired.
