Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the flour and salt. Mix well.

  2. 2

    Add Butter

Cut the unsalted butter into small pieces and add to the flour mixture. Use your fingers or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.

  3. 3

    Add Egg Yolks and Water

In a small bowl, whisk together the egg yolk and cold water. Gradually add this mixture to the flour and butter mixture, stirring until the dough comes together.

  4. 4

    Chill Dough

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Cook the Beef Mixture

In a large skillet, heat the olive oil over medium heat. Add the chopped onions and bell pepper, sautéing until softened, about 5 minutes.

  2. 6

    Add Garlic and Beef

Stir in the minced garlic and cook for 1 minute. Add the ground beef, cumin, paprika, salt, and black pepper. Cook until the beef is browned and cooked through, breaking it apart with a spoon, about 8-10 minutes.

  3. 7

    Cool the Filling

Remove the skillet from heat and allow the filling to cool slightly while you prepare the dough.

Assembling and Baking

  1. 8

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 9

    Roll Out the Dough

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter to cut out circles, about 5 inches in diameter.

  3. 10

    Fill the Empanadas

Place a tablespoon of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for an extra seal.

  4. 11

    Egg Wash

Brush the tops of the empanadas with the beaten egg for a golden finish.

  5. 12

    Bake

Place the empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown.

  6. 13

    Serve

Remove from the oven and let cool slightly before serving. Enjoy your homemade beef empanadas!
