Method

Preparation of Veal

  1. 1

    Prepare the Veal Chops

Start by trimming any excess fat from the veal chops. Lightly pound them with a meat mallet to ensure even cooking, aiming for about 1/2 inch thickness.

Breading Setup

  1. 2

    Set Up Breading Station

In three separate shallow dishes, place the all-purpose flour in the first dish, beaten eggs in the second, and a mixture of breadcrumbs, grated Parmesan cheese, salt, and black pepper in the third.

Breading Process

  1. 3

    Bread the Veal

Coat each veal chop in flour, shaking off the excess. Dip into the beaten eggs, ensuring it's fully covered, then dredge in the breadcrumb mixture, pressing gently to adhere.

Cooking

  1. 4

    Heat the Oil and Butter

In a large skillet, heat the olive oil and butter over medium heat until the butter has melted and begins to foam.

  2. 5

    Cook the Veal

Carefully place the breaded veal chops in the skillet, cooking for about 4-5 minutes on each side or until golden brown and cooked through. Avoid overcrowding the pan.

Serving

  1. 6

    Serve

Once cooked, remove the veal chops from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately, garnished with lemon wedges if desired.
