Peel the potatoes and cut them into thick chip shapes.

Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C) for frying the chips.

Fry the Chips (First Fry)
Carefully add the potatoes to the hot oil in batches and fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and beer (or sparkling water) until smooth and well combined.

Pat the cod fillets dry with paper towels. Season with salt and pepper.

Dip each fillet into the batter, ensuring it is fully coated.

Heat the Oil for Cod
Increase the oil temperature to 375°F (190°C) for frying the cod.
