Cooking the Pasta

Boil Water
In a large pot, bring 4-6 quarts of salted water to a rolling boil.

Cook the Capellini
Add the capellini to the boiling water. Cook for 2-4 minutes or until al dente, stirring occasionally to prevent sticking.

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve about 1/2 cup of the pasta water.
Making the Sauce

Prepare the Sauce Ingredients
In a blender or food processor, combine the smoked salmon, heavy cream, lemon juice, dill, and black pepper.

Blend the Sauce
Blend until smooth and creamy. Adjust seasoning as needed.

Heat the Sauce
In a saucepan over low heat, pour the blended sauce and heat gently, stirring occasionally. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
