1. Marinate the Chicken

In a large bowl, combine the chicken thighs, olive oil, minced garlic, salt, black pepper, cumin, and paprika. Toss to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

While the chicken is marinating, slice the bell peppers, onion, and zucchini. Set aside.
