Method

Beans Preparation

  1. 1

    Soak the Beans

In a large bowl, soak the red beans in water overnight or for at least 8 hours.

  2. 2

    Cook the Beans

Drain the soaked beans and place them in a pot with 4 cups of fresh water. Add minced garlic, chopped onion, and salt. Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.

Rice Preparation

  1. 3

    Cook the Rice

In a saucepan, add 1 cup of white rice, 2 cups of water, and 0.5 tsp of salt. Bring to a boil, then cover and reduce heat to low. Cook for about 15-20 minutes until rice is fluffy and water is absorbed.

Meats Cooking

  1. 4

    Cook the Ground Beef

In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.

  2. 5

    Cook the Chorizo

In the same skillet, add chorizo sausage and cook until browned, about 5 minutes.

  3. 6

    Cook the Pork Belly

In another skillet, cook pork belly over medium heat until crispy, about 10-15 minutes. Drain and set aside.

  4. 7

    Cook the Bacon

In a separate skillet, cook the bacon until crispy, about 5-7 minutes. Drain on paper towels.

Toppings Preparation

  1. 8

    Prepare Avocado

Slice the avocado in half, remove the pit, and slice into wedges.

  2. 9

    Fry the Eggs

In a skillet, fry the eggs over medium heat until the whites are set and the yolks are cooked to your liking.

  3. 10

    Cook Plantains

In a skillet, heat some oil and fry the sliced plantains until golden brown, about 2-3 minutes on each side.

Assembling the Bandeja Paisa

  1. 11

    Plate the Ingredients

On a large platter, arrange a serving of rice, beans, ground beef, chorizo, pork belly, and bacon.

  2. 12

    Add Toppings

Top with avocado, fried eggs, arepas, and fried plantains.

  3. 13

    Serve with Condiments

Serve the bandeja paisa with aji sauce and lime wedges on the side.
