Prepare the Balsamic Glazed Fillet

    Marinate the Fillet

    In a bowl, combine balsamic vinegar, olive oil, minced garlic, salt, black pepper, and honey. Mix well and add the fillet steak, ensuring it is fully coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Cook the Fillet

    Preheat a grill or skillet over medium-high heat. Remove the fillet from the marinade, reserving the marinade. Cook the fillet for about 4-5 minutes on each side for medium-rare, or until desired doneness. Baste the fillet with the reserved marinade during the last minute of cooking. Remove from heat and let rest for 5 minutes.

    Glaze the Fillet

    In a small saucepan, bring the reserved marinade to a boil over medium heat. Reduce the heat and let it simmer until it thickens slightly (about 5-7 minutes). Slice the fillet into strips and drizzle with the balsamic glaze.

Assemble the Salad

    Prepare the Salad Base

    In a large bowl, add the mixed herb leaves, halved cherry tomatoes, and marinated mushrooms. Toss gently to combine.

    Combine and Serve

    Place the salad mixture on a large serving platter. Top with the sliced balsamic glazed fillet. Drizzle any remaining balsamic glaze over the top. Serve immediately.
