Arroz (Rice)

Eggs

Method

Cooking the Rice

  1. 1

    Prepare the Rice

In a medium saucepan, combine 1 cup of long-grain white rice, 2 cups of water, and 0.5 tsp of salt. Bring to a boil over medium-high heat.

  2. 2

    Simmer

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

  3. 3

    Fluff the Rice

Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Cooking the Eggs

  1. 4

    Heat the Oil

In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.

  2. 5

    Cook the Eggs

Crack the 2 large eggs into the skillet. Sprinkle with 0.25 tsp of salt and 0.25 tsp of black pepper. Cook until the whites are set and the yolks reach your desired doneness, about 2-4 minutes.

Making the Arepas

  1. 6

    Mix the Dough

In a bowl, combine 1 cup of pre-cooked cornmeal, 1 cup of water, and 0.5 tsp of salt. Mix until a dough forms. Let it rest for 5-10 minutes.

  2. 7

    Shape the Arepas

Divide the dough into 2-4 equal portions and shape each portion into a round patty, about 1/2 inch thick.

  3. 8

    Cook the Arepas

In a skillet over medium heat, melt 1 tablespoon of butter. Add the shaped arepas and cook for about 5-7 minutes on each side, until golden brown and crispy.

  4. 9

    Keep Warm

Once cooked, keep the arepas warm in a clean kitchen towel while the eggs and rice finish cooking.
