    In a small bowl, combine saffron threads with 2 tablespoons of warm water. Let it steep for about 10 minutes while preparing the other ingredients.

    In a large skillet or paella pan, heat 2 tablespoons of olive oil over medium heat. Season the chicken thighs with salt and black pepper. Add the chicken to the pan and cook for about 5-7 minutes on each side until golden brown. Remove from the pan and set aside.

    In the same pan, add the remaining tablespoon of olive oil. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté for about 3-4 minutes until the vegetables are softened.

    Stir in the long-grain rice, making sure it is coated with the oil and vegetables. Pour in the chicken broth and the saffron mixture (including the threads). Bring to a boil.
