Method

Preparation

  1. 1

    Prepare the Seafood

In a large bowl, combine the shrimp, mussels, and calamari. Season with salt, black pepper, and paprika. Set aside to marinate for about 15 minutes.

  2. 2

    Prepare the Vegetables

Finely chop the onion, mince the garlic, dice the red bell pepper, and chop the tomatoes. Set aside.

Cooking

  1. 3

    Sauté the Aromatics

In a large skillet or paella pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes.

  2. 4

    Add Tomatoes and Rice

Add the chopped tomatoes to the skillet, stirring well. Cook for about 5 minutes until the tomatoes soften. Then add the basmati rice, stirring to coat the rice with the vegetable mixture.

  3. 5

    Add Broth and Cook Rice

Pour in the fish stock or seafood broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15 minutes.

  4. 6

    Add Seafood

After 15 minutes, uncover the skillet and add the marinated seafood mixture. Stir gently to combine and cover again. Cook for an additional 5-7 minutes, or until the shrimp are pink and the mussels have opened.

  5. 7

    Finish and Serve

Remove from heat and stir in chopped parsley. Let rest for a few minutes before serving. Adjust seasoning with salt and black pepper as needed.
