Method
Making the Arepas
- 1
Prepare the Dough
In a large mixing bowl, combine the pre-cooked cornmeal, salt, and water. Mix well until a dough forms. Let it sit for about 5 minutes to hydrate.
- 2
Shape the Arepas
Divide the dough into 8 equal portions and shape each portion into a round patty that is about 1/2 inch thick.
- 3
Cook the Arepas
Heat a skillet over medium heat and add vegetable oil. Once hot, cook the arepas for about 5 minutes on each side, or until golden brown and crispy.
Preparing the Filling
- 4
Prepare Ingredients
While the arepas are cooking, prepare the fillings. Dice the tomato, slice the avocado, and have the shredded cheese and cooked black beans ready.
- 5
Assemble the Arepas
Once the arepas are cooked, slice them in half and stuff them with the cheese, beans, avocado, and tomato. Drizzle with sour cream and hot sauce to taste.
Making the Tostones
- 6
Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.
- 7
Fry the Plantains
Heat the vegetable oil in a deep pan over medium-high heat. Fry the plantain slices for about 4-5 minutes until they are golden and soft.
- 8
Smash and Fry Again
Remove the fried plantains and place them on a cutting board. Use a flat object to smash each slice to about 1/2 inch thick. Return them to the hot oil and fry again for another 2-3 minutes until crispy.
- 9
Season and Serve
Remove the tostones from the oil, sprinkle with salt, and serve hot as a side with the arepas.
