Method
Cocktail
- 1
Prep the fruit
Hull and quarter 3 fresh strawberries. Reserve one thin strawberry slice (or a small pineapple wedge) for garnish.
- 2
Muddle
Place the hulled and quartered strawberries into a rocks or mixing glass. Add 0.25 oz simple syrup and 0.5 oz fresh lime juice. Using a muddler, gently press and twist until the strawberries are broken down and yield a fragrant, slightly pulpy puree (about 10–15 seconds). Do not over-muddle to avoid excessive bitterness from seeds.
- 3
Build the cocktail
Add 2 oz Malibu coconut rum and 4 oz pineapple juice to the muddled strawberry mixture. Fill the mixing glass or shaker with ice (about 1 cup). If you prefer a lighter, slightly fizzy drink, add 1 oz club soda now.
- 4
Shake
If using a cocktail shaker: cap the shaker and shake vigorously for 8–10 seconds until well chilled. If using just a mixing glass: stir briskly for about 10 seconds to chill and integrate.
- 5
Strain and serve
Fill a highball glass with fresh ice. Double-strain the cocktail into the glass (use a fine mesh strainer along with the shaker/strainer) to remove strawberry seeds and pulp, unless you prefer a more rustic presentation and want the pulp left in.
- 6
Garnish
Garnish with the reserved strawberry slice or pineapple wedge on the rim. Optionally, thread a strawberry and a small pineapple wedge on a pick for a tropical look.
- 7
Serve
Serve immediately with a straw. Stir gently before sipping to distribute any strawberry settling. Enjoy chilled.
