Method
Cocktail
- 1
Prepare the clay cup
If desired, moisten the rim of a traditional cantarito clay cup (or a rocks glass) with a lime wedge. Dip the rim into coarse salt or Tajín to coat. Set the cup aside.
- 2
Mix juices and sweetener
In a cocktail shaker (or a large mixing glass), combine fresh lime juice, fresh orange juice, and agave nectar. Stir or shake briefly until the agave is fully incorporated and the mixture is homogeneous (about 10–15 seconds).
- 3
Add tequila and ice
Add Altos Plata tequila to the shaker, then fill the shaker about two-thirds with ice. Shake vigorously for 8–10 seconds to chill and slightly dilute the mixture.
- 4
Assemble the drink
Fill the prepared cantarito clay cup with fresh ice cubes. Strain the shaken mixture over the ice in the cup, leaving some room at the top for soda.
- 5
Top with grapefruit soda
Gently top the cocktail with chilled grapefruit soda (about 3 oz), pouring slowly to preserve carbonation. Stir once gently with a bar spoon to combine without losing too much fizz.
- 6
Garnish and serve
Garnish with a lime wedge on the rim and a grapefruit or orange wheel on the ice. Serve immediately with a short straw or stirrer.
Batch Preparation (6 servings)
- 7
In a large pitcher, combine 12 oz Altos Plata tequila, 6 oz fresh lime juice, 12 oz fresh orange juice, and 3 oz agave nectar. Stir thoroughly until the agave is completely dissolved.
- 8
Fill six cantarito cups or glasses with ice. Divide the prepared mix evenly among the cups (about 4 oz mixture per cup). Top each with 3 oz chilled grapefruit soda, stir gently, and garnish with lime wedges and citrus wheels.
- 9
If rimming cups, run a lime wedge around each rim and dip into salt or Tajín before filling.
