Mashing

Heat Water
Heat 3 gallons of filtered water to around 165°F (74°C).

Mashing
Add the crushed grains (Pale Malt, Caramel Malt, Flaked Oats) to the heated water and mash for 60 minutes at 152°F (67°C).

Sparging
After 60 minutes, sparge with an additional 2 gallons of water at 170°F (77°C).
Boiling

Boil Wort
Bring the wort to a rolling boil, then add 1 oz of Mosaic hops. Boil for 60 minutes.

Add Remaining Hops
With 15 minutes left in the boil, add 0.5 oz of Citra hops and 0.5 oz of Amarillo hops.

End of Boil
At flameout, add the remaining 0.5 oz of Citra hops and 0.5 oz of Amarillo hops.
Fermentation

Cool Wort
Cool the wort quickly to around 70°F (21°C) using a wort chiller.

Pitch Yeast
Transfer the cooled wort to a fermentation vessel and pitch the American Ale yeast.

Ferment
Seal the fermentation vessel and let it ferment for 1-2 weeks at 68°F-72°F (20°C-22°C).
Bottling

Prepare Bottles
Sanitize bottles and caps.

Bottle Beer
Transfer the beer into bottles, adding priming sugar if necessary, then cap the bottles.

Condition
Let the beer condition at room temperature for 1-2 weeks before refrigerating.
