Method
Cooking Ahi Tuna
Sear the Tuna
Heat sesame oil in a skillet over high heat. Season the tuna steaks with salt and togarashi. Sear the tuna for about 1-2 minutes on each side, or until a crust forms but the center remains rare.
Preparing Napa Slaw
Make the Slaw
Thinly slice the napa cabbage and carrot. Chop the green onions. In a bowl, combine all slaw ingredients, mix well and season with salt to taste. Let it sit for at least 10 minutes.
Making Mango Aioli
Blend the Aioli
In a bowl, mix mango puree, mayonnaise, lime juice, and minced garlic until smooth. Adjust seasoning if necessary.
Preparing Sesame Crackers
Bake the Crackers
Preheat the oven to 350°F (175°C). In a bowl, mix rice flour, sesame seeds, water, and salt until a dough forms. Roll out thin and cut into desired shapes. Bake for 10-12 minutes or until golden and crisp.
Plating
Serve the Dish
On a plate, place a portion of napa slaw, top with the seared ahi tuna, drizzle with mango aioli, and serve with sesame crackers on the side.
