Brewing Instructions

Mashing
In a large brew kettle, heat 3 liters of water to 160°F (71°C). Add the Pale Malt, Wheat Malt, and Flaked Wheat. Maintain the temperature at 150°F (65°C) for 60 minutes, stirring occasionally.

Sparging
After mashing, sparge the grains with an additional 3 liters of water heated to 170°F (77°C) to collect the wort.

Boiling
Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. During the last 5 minutes of the boil, add the fresh orange zest and crushed coriander seeds.

Cooling
Cool the wort quickly using an immersion chiller or an ice bath until it reaches about 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Belgian Witbier yeast according to package instructions. Seal the fermentation vessel and allow it to ferment at room temperature for about 1-2 weeks.

Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this solution to the beer before bottling to carbonate. Bottle the beer using sanitized bottles and caps.

Conditioning
Allow the bottled beer to condition at room temperature for an additional 1-2 weeks before refrigerating.
