    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash the Russet potatoes and poke holes in them with a fork. Rub them with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes until tender.

    Prepare the Potato Skins

    Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the insides, leaving a small amount of potato on the skin for structure.

    Season and Bake Again

    Brush the insides of the potato skins with olive oil, and sprinkle with salt and black pepper. Place them cut-side down on a baking sheet and bake for another 10-15 minutes until crispy.

    Add Toppings

    Remove the potato skins from the oven and turn them over. Fill each skin with shredded cheddar cheese, crumbled bacon, and chopped green onions. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted.

    Serve

    Remove from the oven, let cool slightly, and serve hot with a dollop of sour cream on top.
