Prepare the Dipping Sauce
In a small bowl, whisk together the soy sauce, wasabi paste, rice vinegar, and sesame oil until well combined. Set aside.

Prepare the Ahi Tuna
Pat the Ahi tuna steaks dry with paper towels. Rub both sides with olive oil, salt, and black pepper.

Sear the Tuna
Heat a non-stick skillet over high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for medium-rare, depending on the thickness of the steaks. Roll the edges in sesame seeds to coat.

Serve
Remove from heat, slice the tuna steaks into thin strips, and serve on a plate with the dipping sauce on the side.
