Rinse mussels and clams under cold water, discard any with broken shells or that do not close when tapped. Pat seafood dry. Halve the cherry tomatoes, mince the garlic, and finely chop shallots and parsley. Zest and juice the lemon.

Place saffron threads in 2 tablespoons warm (not boiling) water or a tablespoon of warm stock to bloom while you prepare other ingredients (5–10 minutes).

Cook pasta

Bring a large pot of generously salted water to a boil. Add linguine and cook until just shy of al dente according to package directions (about 9 minutes for 12 oz linguine; finish in the sauce). Reserve 1.5 cups of pasta cooking water, then drain the pasta and set aside.

Make lobster-saffron broth

Sauté aromatics

In a large, deep skillet or wide sauté pan over medium heat, warm 2 tablespoons olive oil and 1 tablespoon butter. Add shallots and cook until softened and translucent, about 2–3 minutes. Add minced garlic and red pepper flakes and cook 30–45 seconds until fragrant.

Deglaze & simmer

Pour in the white wine, increase heat to medium-high and let it reduce by half (about 2–3 minutes). Add the lobster or fish stock and the saffron with its soaking liquid. Bring to a gentle simmer.

Finish broth

Stir in the heavy cream and remaining 1 tablespoon butter. Season with 3/4 teaspoon kosher salt and 1/4 teaspoon black pepper (reserve remaining salt/pepper to adjust later). Simmer gently 3–4 minutes so flavors meld and broth slightly thickens. Keep the broth at a low simmer (do not boil vigorously).

Cook seafood & assemble

Cook shellfish

Increase heat to medium-high and add mussels and clams to the simmering broth. Cover the pan and steam until shells open, 4–6 minutes. Using tongs or a slotted spoon, remove opened mussels and clams to a bowl and cover to keep warm. Discard any that remain closed after cooking.

Cook shrimp & scallops

Add another tablespoon olive oil to the pan if needed. Add shrimp and scallops to the broth and cook, stirring gently, until just opaque, about 2–3 minutes. Remove and set aside with mussels and clams to avoid overcooking.

Reduce & concentrate

If the broth seems thin, increase heat and reduce 2–3 minutes until it tastes concentrated but still saucy. Stir in cherry tomatoes and chopped lobster meat (if using) and cook 1–2 minutes just to warm tomatoes while they release some juices.

Combine with pasta

Add the drained linguine to the pan along with 1/2 to 1 cup reserved pasta water (add more if needed). Toss gently and cook 1–2 minutes so pasta finishes cooking and absorbs the broth. Add back all seafood (mussels, clams, shrimp, scallops, lobster) and gently toss to combine. If the sauce is too thick, add additional reserved pasta water by tablespoonfuls to reach a silky consistency.

Finish & season

Remove from heat. Stir in remaining 1 tablespoon butter, lemon juice and half the chopped parsley. Taste and adjust salt and pepper. Add lemon zest and a drizzle (1 teaspoon) olive oil if desired.

Plate the linguine and seafood, spoon extra broth over top, sprinkle remaining parsley, and serve immediately with lemon wedges.
