Prep crab

Pick through the jumbo lump crab meat on a large plate or shallow bowl to remove any bits of shell. Keep the lumps as intact as possible; you want visible chunks in the finished cakes.

Make binding mix

In a medium bowl whisk together 1/4 cup mayonnaise, the egg, 1 tablespoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, 1 teaspoon Old Bay, lemon zest, lemon juice, chopped shallot, chopped parsley, sea salt and black pepper until smooth.

Combine with crab

Gently fold the crab meat into the binding mix with a rubber spatula, taking care not to break up the lumps. Sprinkle 3/4 cup fresh breadcrumbs (or panko) over the mixture and fold in just until mixture holds together when pressed. If mixture feels too wet, add up to 2 more tablespoons breadcrumbs.

Form cakes

Divide the mixture into 6 equal portions (about 3 ounces each) and shape into round, compact patties about 1-inch thick. Place patties on a tray and refrigerate, uncovered or loosely covered, for at least 30 minutes to firm up (this helps them hold while searing).

Coat exterior

Spread the extra 1/2 cup panko on a plate. Lightly press each chilled cake into the panko to coat the top and sides—do not overwork; you want a light crust that browns nicely.

Sear

In a large nonstick or stainless-steel skillet, heat 2 tablespoons unsalted butter and 1 tablespoon neutral oil over medium-high until butter foams and just begins to brown. Add crab cakes (work in batches if needed) and sear 3–4 minutes per side until golden brown and heated through. Gently flip with a wide spatula to keep cakes intact. Internal temperature should reach 145°F (63°C) or cakes should be hot and firm.

Finish in oven (optional)

If cakes are thick or you prefer a gentler finish, transfer skillet to a preheated 350°F (175°C) oven for 6–8 minutes after searing to finish cooking through and set the center.

Mustard Aioli

While crab cakes chill, whisk together 1/2 cup mayonnaise, 2 teaspoons Dijon mustard, 1 teaspoon whole-grain mustard, 1 teaspoon lemon juice, 1/2 teaspoon minced garlic, 1/4 teaspoon hot sauce (optional), 1/4 teaspoon sea salt and 1/8 teaspoon black pepper in a small bowl until smooth. Taste and adjust seasoning. Refrigerate until ready to serve.

Garnish & Finishing

Plate the crab cakes with a dollop or smear of mustard aioli. Lightly dust each cake with 1/2 teaspoon hot smoked paprika for a smoky heat accent. Garnish with microgreens or chopped parsley and serve with lemon wedges alongside.
