Prepare cheeses

Remove all cheeses from the refrigerator 30–45 minutes before serving to come to room temperature — this improves flavor and texture. Place the cheddar block on a cutting board and slice into 12 thin wedges or cubes (about 1.25 cm pieces) for easy picking. Leave the brie whole; score a shallow cross on the rind to guide guests and, if desired, slice the top rind off for easier spreading. Put the goat cheese log on a small serving dish and, if desired, roll half of it in cracked black pepper or chopped walnuts for texture.

Wash and prep fruit

Rinse grapes thoroughly and pat dry; separate into small clusters or individual berries so they are easy to pick. Rinse figs, trim stems and halve or quarter depending on size (6 figs should yield 12–18 bite-size pieces). Core the apple and pear and thinly slice into 12–16 slices each, tossing apple slices with a teaspoon of lemon juice if you worry about browning (lemon juice not listed above—optional).

Arrange dried fruit and nuts

Place dried apricots and walnut halves in small piles on the board or platter in between cheeses and fresh fruit to create balance and visual interest.

Toasts/crackers

If using a fresh baguette, slice into 12–16 thin slices and toast lightly under the broiler or in a skillet with a little olive oil until golden. Alternatively place crackers or pre-toasted slices on the platter.

Drizzle honey

Warm the honey slightly (10–15 seconds in a microwave or by placing the jar in a bowl of hot water) so it becomes runny. Drizzle approximately 2 tablespoons of honey in a small pool near the brie and goat cheese for spreading; reserve the rest for guests to add as desired.

Select a large wooden board or platter. Arrange the cheeses with some space between them so guests can cut and serve: brie at one end, cheddar at another, goat cheese in the center. Fill gaps with clusters of red and green grapes, fig pieces, apple and pear slices, and small piles of dried apricots and walnuts. Fan crackers or toasted baguette slices along the edges. Place a small spoon or honey dipper next to the honey, and a cheese knife by each cheese type (a soft cheese spreader for brie and goat cheese, a harder knife for cheddar). Sprinkle flaky sea salt lightly over the brie and a small crack of black pepper on the goat cheese if you prepared it plain. Tuck fresh thyme or rosemary sprigs into empty spaces for aroma and presentation.

Final checks: taste one item for seasoning and adjust — add another pinch of flaky salt to the cheddar if desired. Serve at room temperature with small plates and napkins. Provide labels if you like (cheese names) so guests know what they’re tasting.
