Method

Cocktail

1

Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill with ice water to chill while you build the drink.

2

Measure and add

To a cocktail shaker, add 2 oz reposado tequila, 0.75 oz Aperol, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.25 oz Yellow Chartreuse, and 2 dashes orange bitters.

3

Add ice and shake

Fill the shaker with about 1 cup of ice, cap, and shake vigorously for 12–15 seconds until the shaker is well chilled (exterior becomes cold and slightly frosted).

4

Double strain

Discard ice or water from the chilled glass. Fine-strain the cocktail from the shaker into the chilled coupe or Nick & Nora glass using a Hawthorne or julep strainer and a fine mesh strainer to remove small shards of ice and any pulp.

Garnish & Finish

5

Express a grapefruit twist over the surface of the drink to release oils, then rub the rim lightly with the twist and drop it into the glass as a garnish.

6

If desired, finish with a very light pinch of flaky sea salt on the top of the cocktail to heighten flavors—use sparingly so it doesn't dissolve immediately.

7

Serve immediately and enjoy.
