Chill

Place the bottle of San Pellegrino in the refrigerator for at least 1 hour prior to serving so it is well chilled. Alternatively, chill glasses in the freezer for 15–20 minutes.

Wash the lemon and orange thoroughly. Using a sharp knife or mandoline, cut 2 thin slices from the lemon and 2 thin slices from the orange. If desired, cut a small slit halfway through each slice so they can sit on the rim of a glass.

If using fresh mint, gently smack the mint leaves between your palms to release aroma but keep leaves mostly intact.

Assembly

Fill two tall glasses about three-quarters full with ice cubes (approx. 1/2 cup per glass). If you chilled glasses, reduce ice to keep beverage cold without diluting.

Place 1 lemon slice and 1 orange slice into each glass. If using mint, tuck 3 mint leaves into each glass, distributing them around the ice so they release aroma but remain visible.

If you want a lightly sweetened version, add 1/2 teaspoon simple syrup to each glass. Stir briefly to combine with the fruit and mint.

Slowly pour 250 ml of chilled San Pellegrino into each glass (pour down the side of the glass to preserve carbonation). Pour gently to maintain effervescence.

Give each glass one gentle stir with a spoon to combine flavors without flattening the bubbles.

Garnish each glass by placing the remaining lemon or orange slice on the rim if you made slits, or float them on top. Serve immediately while sparkling.
