Prepare glass

Fill a tall glass about three-quarters full with ice (roughly 1 cup). Using chilled glassware helps keep carbonation longer.

Add syrup

Pour 2 tablespoons of your chosen flavored syrup into the glass over the ice. For a layered look, pour the syrup first so it stays near the bottom until stirred.

Add sparkling water

Slowly pour 8 oz chilled sparkling water into the glass. Pour gently down the side or over the back of a spoon to preserve carbonation and reduce foam.

Add cream

Gently pour 1 oz half-and-half or heavy cream on top. For a marbled appearance, do not stir immediately; the cream will slowly ripple through the soda.

Optional: Top and garnish

Add 2 tablespoons of whipped cream on top if desired. Garnish with a berry, citrus twist, or mint sprig. Serve with a straw and stir before drinking to combine flavors.

Chill components

Ensure sparkling water and cream are well chilled. Keep flavored syrup at room temperature or chilled—cold syrup mixes better and reduces foaming.

Portion syrup into glasses or pitcher

If serving individually, place 2 tbsp syrup into each of six glasses. If using a pitcher, combine 12 tbsp syrup in the bottom.

Add ice

Add about 1 cup of ice to each glass. If using a pitcher, fill glasses with ice when ready to serve rather than chilling the whole pitcher to maintain carbonation.

Top with sparkling water

Pour chilled sparkling water into each glass, about 8 oz each, pouring gently to preserve fizz. If using a pitcher, pour 48 oz sparkling water slowly into the pitcher and immediately transfer to glasses to serve.

Finish with cream and serve

Add 1 oz half-and-half or heavy cream to each glass. Optionally top with whipped cream (2 tbsp per glass) and garnish with fruit or mint. Serve immediately with a straw so guests can stir to combine.

Variations & Notes

Flavor suggestions: raspberry, vanilla, peach, coconut, cherry, lavender, or seasonal syrups. To make a dairy-free version substitute coconut milk or oat creamer in equal volume for the half-and-half.

Sweetness control: adjust syrup from 1 to 3 tbsp per serving to taste. Use sugar-free syrup if desired, but note some sugar-free syrups can affect mouthfeel.

Make-ahead tip: pre-measure syrups into chilled glasses and keep covered in the fridge. Add ice, sparkling water, and cream right before serving to preserve carbonation and cream texture.
