Cooking Rice

1. Rinse the Rice

Place the basmati rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from being sticky.

2. Cook the Rice

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

Cooking Vegetables

3. Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.

4. Add Remaining Vegetables

Add the diced red bell pepper, zucchini, and drained chickpeas to the skillet. Stir well and cook for an additional 5-7 minutes until the vegetables are tender.

Seasoning and Serving

Sprinkle in the cumin powder, paprika, salt, and black pepper. Stir to combine and cook for another 2-3 minutes to let the flavors meld.

6. Serve the Dish

Serve the sautéed vegetable and chickpea mixture over a bed of fluffy basmati rice. Garnish with chopped fresh parsley before serving.
