Raspberry Basil Sauce
Wontons
1. Prepare the Filling
In a mixing bowl, combine the goat cheese, minced garlic, chopped fresh basil leaves, salt, and black pepper. Mix until well combined and creamy.
2. Assemble the Wontons
Take a wonton wrapper and place about 1 teaspoon of the goat cheese filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a triangle, and press the edges to seal. Make sure there are no air bubbles.
3. Fry the Wontons
In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the wontons in batches and fry until golden brown and crispy, about 2-3 minutes per side. Remove and place on paper towels to drain excess oil.
Raspberry Basil Sauce
4. Cook the Sauce
In a small saucepan over medium heat, combine the fresh raspberries, honey, lemon juice, and a pinch of salt. Cook until the raspberries break down and the mixture starts to thicken, about 5-7 minutes. Stir frequently.
5. Blend the Sauce
Remove from heat and let cool slightly. Transfer the mixture to a blender, add the fresh basil leaves, and blend until smooth. Adjust sweetness if necessary by adding more honey.
6. Serve
Drizzle the raspberry basil sauce on a plate and arrange the crispy goat cheese wontons on top. Enjoy your delicious appetizer!
