    Wash and Cut Potatoes

    Wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes if desired. Cut the potatoes into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato strips into a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve crispiness.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    After soaking, drain the potatoes and lay them out on a clean towel. Pat them dry to remove excess moisture.
