Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler, stirring frequently until smooth. Remove from heat and let it cool slightly.

    Separate the Eggs

    Carefully separate the egg yolks from the egg whites, placing the yolks in a large mixing bowl and the whites in a separate bowl.

    Whisk Egg Yolks and Sugar

    Add granulated sugar to the egg yolks and whisk until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

    Beat Egg Whites

    Using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form.

    Fold in Egg Whites

    Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

    Fold in Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, or until set.
