Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  3. 3

    Whisk Eggs and Sugar

In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and thick.

  4. 4

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, whisking continuously until well combined.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour, salt, and vanilla extract. Gently fold the dry ingredients into the wet ingredients until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm and the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes. This will help the cakes pull away from the edges.

  4. 9

    Serve

Carefully invert each ramekin onto a plate. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream and fresh berries, if desired.
