Prepare Calamari
Rinse the calamari rings under cold water and pat them dry with a paper towel.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, chipotle powder, salt, and black pepper. Mix well to ensure an even distribution of spices.

Coat Calamari
Dredge the calamari rings in the flour mixture, ensuring they are well coated. Shake off any excess flour.

Heat Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain and Serve
Using a slotted spoon, remove the fried calamari from the oil and drain on paper towels. Serve immediately while hot.
Chipotle Aioli

In a medium bowl, combine the mayonnaise, chipotle peppers, lemon juice, minced garlic, and salt.

Using a whisk or a fork, mix all the ingredients until smooth and well blended.
