Calamari Preparation

Prepare the Calamari
Clean and slice the calamari into rings approximately 1/2 inch thick. Rinse under cold water and pat dry with paper towels.

Soak in Buttermilk
Place the calamari rings in a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes in the refrigerator.

Prepare the Breading
In a separate bowl, combine the flour, cornstarch, paprika, garlic powder, salt, and black pepper. Mix well.

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, ensuring they are well coated.

Heat Oil
In a deep pan or fryer, heat the oil over medium-high heat until it reaches about 375°F (190°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.

Remove the sauce from heat and serve warm alongside the crispy fried calamari.
