Braised Boneless Short Ribs

    Prepare the Ribs

    Preheat your oven to 325°F (163°C). Season the boneless short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 4-5 minutes per side. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, reduce the heat to medium and add chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and let reduce by half.

    Add Broth and Herbs

    Return the short ribs to the pot, then add beef broth, thyme, and bay leaves. Bring to a boil.

    Braise the Ribs

    Cover the pot and transfer to the preheated oven. Braise for 2-3 hours until the ribs are tender.

    Boil the Potatoes

    In a large pot, add cubed potatoes and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, minced jalapeño, salt, and black pepper. Mash until smooth and creamy.

Caramelized Onion Sauce

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add thinly sliced onions and cook, stirring occasionally until golden brown and caramelized, about 15-20 minutes.

    Add Flavor

    Stir in brown sugar and balsamic vinegar. Cook for an additional 5 minutes, adjusting with salt and black pepper to taste.
